OK, so last week I was complaining about not having a proper summer, and now I’m literally melting. Temperatures in Switzerland went from 16°C to 31°C within 24 hours. This cries for a refreshment, i.e. popsicles, my friends. In my superb new cook book, Eat Better Not Less, of inspiring Swiss food blogger Nadia Damaso, I found the recipe of banana popsicles. They’re healthy, refreshing, and seriously delicious. Plus they don’t take more than 10 minutes to make. Sounds like perfection? Here’s what you need and how you do it:
3-4 ripe bananas
80g dark chocolate
Toppings at your liking – I went for dried edible blossoms and coconut flakes
Slice the peeled bananas in halves, and thread each half onto a skewer. Freeze the bananas for at least 2 hours.
Chop the chocolate, place it in a metal bowl set over a pot of simmering water, and melt it. Dip the frozen bananas in the chocolate and very quickly add the toppings (the chocolate solidifies in a flash because of the difference in temperature). You can serve those little beauties immediately or keep them in the freezer for a couple of days. Which I doubt you will, because they’re delicious as hell.
By the way, childish me also came up with a kiddy version with candy eyes and a dried berry hairdo. Kinda love it :-)
